Smashed Sauce Loaded Potato Skins

Ingredients

For the Potato Skins:

  • 4 large russet potatoes

  • 2 tablespoons olive oil

  • Salt and black pepper, to taste

  • 1 cup shredded cheddar cheese

  • 4 slices cooked bacon, crumbled

  • 2 green onions, thinly sliced

  • Smashed Sauce (recipe below)

For the Smashed Sauce:

  • 1/2 cup Poundtown Smashed Original Sauce

  • 1/4 cup sour cream

  • 2 tablespoons mayonnaise

  • 1 tablespoon fresh chives, chopped

  • 1/2 teaspoon garlic powder

  • Salt and black pepper, to taste

Preparation

For the Smashed Sauce:

  1. In a mixing bowl, combine Poundtown Smashed Original Sauce, sour cream, mayonnaise, chopped chives, garlic powder, salt, and black pepper. Mix well until all the ingredients are thoroughly combined. Refrigerate the sauce until ready to use.

For the Potato Skins:

  1. Preheat your oven to 400°F (200°C).

  2. Wash and scrub the russet potatoes thoroughly. Pat them dry with paper towels.

  3. Pierce each potato several times with a fork. This helps steam escape while baking.

  4. Rub each potato with olive oil, sprinkle with salt and black pepper, and place them directly on the oven rack. Bake for about 45-60 minutes or until the potatoes are tender when pierced with a fork.

  5. Remove the baked potatoes from the oven and let them cool slightly. Reduce the oven temperature to 375°F (190°C).

  6. Slice each potato in half lengthwise. Scoop out the flesh, leaving a thin layer of potato attached to the skin. Save the scooped-out potato for another use (e.g., mashed potatoes).

  7. Place the hollowed-out potato skins on a baking sheet. Brush the insides with a bit more olive oil and season with additional salt and pepper if desired.

  8. Sprinkle shredded cheddar cheese inside each potato skin, followed by crumbled bacon.

  9. Bake the loaded potato skins for about 10-15 minutes or until the cheese is melted and bubbly.

  10. Remove the potato skins from the oven and drizzle each one with a generous amount of the Smashed Sauce.

  11. Garnish the Smashed Sauce Loaded Potato Skins with sliced green onions.
